Chocolate Chip Banana Bread
We’ve been making this recipe (inspired by Dr. Rachel Schwartzman, ND) all summer. It is quick, tasty, and freezes well.
Mix together:
3 mashed bananas
1 TBSP lemon juice (or ½ lemon)
¼ cup coconut oil melted
Mix and add:
⅔ cup flour (oat, whole wheat, gluten free blend)
⅓ cup hemp seeds
⅓ cup ground flax seeds
½ tsp baking powder
½ tsp baking soda
Add:
⅓ cup chocolate chips
Pour into greased loaf pan or muffin tins. We use a loaf pan to save on the mess.
Bake at 350F
18-20 minutes for muffins
35-40 minutes for loaves
