Coconut Lentil Fudge
I love this recipe because it’s super easy (no baking), it’s nut-free (school-friendly), uses up leftover lentils, and tastes great (kid-friendly)!
⅓ cup sunflower seeds
⅓ cup coconut flakes
1 cup cooked green lentils
3 TBSP cocoa powder
¼ cup honey
3 TBSP coconut oil (melted)
Mix all of the ingredients together in a food processor and pulse until smooth. Coconut oil should be in liquid form before doing this.
Transfer the mixture to a pan and chill in the fridge for 3 hours. Once chilled, cut into pieces.
